Mini Mac-N-Cheese To Go

Super convenient when you need something to grab on the go



Prep Time: 20 minutes
Cook Time: 10 minutes

Ingredients:

  • 1/2 pound pasta (I used long noodles, but any work)
  • 1 & 1/2 tbsp butter
  • 2 & 1/4 cup cheddar cheese
  • 3/4 cup milk





Instructions:
  1. Preheat oven to 425 degrees F, spray muffin tin 
  2. Cook pasta until al dente, drain and set aside
  3. In large pan melt butter, whisk in flour over moderate heat for 2 minutes
  4. Whisk in milk and cook until boiling, about 5 minutes
  5. Add cheese and whisk until melted
  6. Take off heat and fold in pasta
  7. Pack mac n cheese in muffin tins, leveling out at the top of openings 
  8. Lightly sprinkle extra cheese and garnish on top (I put red pepper flakes for some spice!)
  9. Bake for 10 minutes until golden and sizzling
