Ingredients:
- 1 lb tofu or 4 boneless chicken breasts
- 1/3 cup flour
- olive oil
- 1/2 tbsp salt
- 1 tsp balsamic vinegar
- 3 tbsp ketchup
- 6 oz. frozen orange juice concentrate, thawed
- 4 tbsp brown sugar
Instructions:
- In a bowl, mix the orange juice, brown sugar, vinegar, salt, and ketchup.
- Pour flour in a small bowl, cover tofu or chicken in it and shake off excess
- Pour a small amount of olive oil in a skillet and brown the flour-covered tofu or chicken (less color will occur on tofu)
- Place tofu or chicken in the mixture and let soak for 15 minutes
- Pour entire mixture into a skillet and cook until slightly crispy
- OR, place pieces on a baking sheet and cook in oven for roughly 25 minutes, flipping half way through
