Prep Time: ~10 minutes
Ingredients:
- 1/2 blueberries ( I froze mine to make it less juicy & messy pre-cooking! )
- 1/3 cup flour (I use wheat, but any should do)
- 2 tbsp rolled oats
- 2/3 tsp baking powder
- 1/8 tsp salt
- 1/2 tsp vanilla extract
- 1 tbsp sugar
- 1/3 cup milk of choice (I use almond milk)
Instructions:
- Combine dry ingredients in a bowl
- Combine wet ingredients in a separate bowl
- Mix wet ingredients into the dry ingredients
- Cook on a skillet (spray with cooking spray if not using a nonstick pan!) on low-medium, flipping each pancake once **make sure not to overheat because the center will NOT cook before the outside burns if you do!
- Serve with syrup, powdered sugar, etc!
